Happy New Year my lovely readers. I hope the year of 2015 has started well for you! I have to say January is always a bit of crazy with everyone trying to shed off the Christmas pudding and turkey. Did you know that average Brit consumed 7000 calories on Christmas Day alone?? I get calls from friends asking to write them a detox plan, detox recipes, recommend detox exercise and even detoxify their cupboards. My usually quiet gym is packed with newbies in shiny leggings, cropped tops and latest Nike's. Madness!
Originally I thought I would blog about how to stick to your resolutions but...! Most people break their resolution after just nine days and today is the 13th which means you have probably already broken them all so I thought I would share something nice, tasty, easy and cheap to help you to break free of the post- Christmas blues. Cucumber salad. I know not the most exciting dish, but I honestly love it and if you have jumped on the Detox band wagon this is just perfect. Cucumbers are refreshing and because of their high water content they are low in calories.
Ingredients:
2 cucumbers medium size
1 tbsp of fresh dill
1 - 2 tbsp of apple cider vinegar (depending how "sharp" you like it)
1/2 - 1 tbsp of coconut sugar or any other sweetener
freshly ground pepper
pink Himalayan or sea salt
Method:
Slice the cucumbers thinly, sprinkle with dill and place in a medium size bowl. In a separate bowl whisk together vinegar and sugar and pour it in the bowl with cucumbers. Season with salt and pepper and mix well. If you want you can add a couple of spoons of white yogurt. Chill in the fridge until ready to serve.
