Hello dear readers, today I have something yummy, comforting, chocolatey, quick to make and tadahhh,yes healthy!!! Chocolate mug cake. I am not a huge fan of microwave food, but when you are totally wiped out at the end of the day this method of cooking comes in really handy. There are also other things I like about mug cake, apart from the obvious, which is its taste… there is literally no aftermath , so no major clean up required, because all you need is one pretty mug and a whisker (or fork) to mix all the ingredients together. Another fab thing is this is a single serving, so you don’t have to worry what is going to happen with the rest of the cake and/ or any other “helpings”. Last but not least is zero guilt..I never feel guilty about eating it, because I know I have put in only the best ingredients, no nasty stuff, no dairy, no gluten and no refined sugar… and it tastes great for breakfast too! Ha!
Recipe: You will need 1 mug and a microwave
Ingredients:
4 tbsp of gluten-free white whole wheat flour
1 heaped tbsp of raw cacao or unsweetened cocoa powder
1 tbsp of maple or brown rice syrup
¼ tsp of baking powder
3 tbsp of unsweetened almond milk or any other nut milk
1 tsp of almond butter
¼ cup of unsweetened apple sauce
2 tbsp of chocolate chips
Method:
So simple, just mix all the ingredients together in the mug. If the batter doesn’t resemble regular cake batter add a touch more apple sauce as it needs to be wet. Once it’s all well combined and the desired consistency achieved, pop the mug in the microwave for between 2 – 3 minutes depending on how strong your microwave is. It is better to keep it in less because it tastes so much better when the centre is still warm and gooey. Decorate with almond butter and your favourite fresh fruit.
